The baking industry’s current challenges

Increased economic pressure

Over the past three years, sales of baked goods have been influenced by price increases. For 2025, Farm Credit Canada Economics forecasts sales to decline by 3.9 percent and volumes (sales adjusted for inflation) to fall by 1.8 percent.

Today’s bakeries will continue to deal with high costs of sugar, egg, oil, and cocoa prices. This will put even more pressure on margins that are already tight from 2023’s grain price increase, which impacted the price of flour (a baking staple).

Labour shortages

Like many industries, the baking industry is the midst of a talent shortage. Particularly, bakeries are having a hard time finding and retaining skilled bakers, along with general labourers.

These days, bakery owners may want to consider attracting a new generation of worker or re-skilling their existing ones to meet the mechanical and technical requirements of future production lines.

Consumer trends

Customer preferences are always evolving. And so should your bakery. More and more people are looking at ingredient lists and, as such, the demand for gluten-free, whole grain, and artisanal products has increased. To meet these expectations, along with seasonal and regional preferences, your bakery needs to be agile.

Automation is quickly becoming a practical solution for many of the issues your bakery may be facing. A number of Canadian bakeries are already seeing success — and strong ROI — from their investment in automation.

In one real-world example, a Quebec bakery needed to produce up to 1.2 million mini croissants each day. While the bakery and its workers were happy to take on the challenge of hand packaging these products, it was slow and risked damaging the croissants.

They opted to install an automated flow-wrapping system with pick-and-place robots and 3D scanning to efficiently inspect and pack products. This not only boosted how fast croissants were being packaged, but it reduced manual labour needs, and freed workers up to focus on higher-value tasks.

In another example, a British Columbia bakery experienced delays because of their manual tray stacking system, which resulted in damaged products and employee strain. So, they partnered with an automation firm to implement a new system that stacks 15 trays each minute.

This successful implementation bolstered the bakery’s productivity by 25 percent, reduced product damage, improved safety, and reduced costs.

What to consider before you invest

While the benefits of automation are real, it’s not a one-size-fits-all solution. To avoid missteps and to maximize your return, it’s imperative to take a strategic approach.

Here are some things to think about before you dive in:

Capital costs

A turnkey automation project can cost two to three times more than the equipment itself once you consider elements like implementation and integration, any downtime, and training.

Readiness

It’s one thing to feel ready, it’s another to make sure your existing systems and processes are ready to support automation. Before you move forward, take a good look at your operations and identify any potential bottlenecks.

Employee transition and training

Your team may need new skills to manage and maintain any automated systems. Consider this upskilling part of the investment.

Make sure you select a system that suits your needs. So, if your bakery focused on small batches of product or your menu varies often, choose an automation solution that can be as flexible as you need it to be.
